I just received the Chef's Choice 120 Sharpener yesterday. Today I sharpened 32 various kitchen knives of good quality and 11 pocket knives of good quality using the new sharpener. After reading so much about the 120 model's outstanding results, I was disappointed. I read and followed the instructions carefully. While it did put a serviceable (not razor sharp) edge on longer kitchen knives, the edge was not even close to a professional job, nor even as good as manually sharpening with a stone. Razor sharp will NOT happen with this sharpener. The model 120 was nearly useless for shorter knives such as small paring knives and small pocket knives because it doesn't sharpen the first 1/2" next to the handle. On a short bladed knife, that doesn't leave much sharpened. On the positive side, it did not damage any of my knives. Overall, I wish that I hadn't wasted my money on the Chef's Choice 120 Sharpener. I'm back to manual sharpening with stones and ceramic rods.
